F10. Out of Home maximum per serving salt targets

Elior is a leading national contract caterer, providing a variety of catering services to workplaces, schools, care homes, retail outlets, sports stadia and heritage sites.
We have been working towards salt reduction for the last 11 years, via our internal 'Balance' programme and latterly our commended 'You & Life' programme. The aim of 'You & Life' is to make healthier eating commonplace across our business by reducing fat, salt and sugar intake and increasing wholegrain, fruit and vegetable availability. We cook from scratch at many of our sites.
To help us deliver on the 'Out Of Home Maximum Per Serving Salt Targets', we will need to focus on our procurement procedures for the products that fall into the 11 categories affected by these targets. We will work closely with all our suppliers to ensure that we meet these salt targets in as many categories as possible, as soon as possible. We need to encourage our suppliers to provide us with an easily recognisable way of highlighting in their catalogues, products that do meet the 'Out Of Home Maximum Per Serving Salt Targets'. We will build into our procurement contracts the need to meet the Out Of Home salt targets and 2017 salt targets. The quantitative work needed to complete Responsibility Deal monitoring forms will help highlight any categories where further work is required to meet the pledge. We are gradually calculating full nutrition data for many of our recipes, this includes salt data.
Reformulation will also be a key focus for Elior and we will continue to adapt our recipes within these 11 categories to within acceptable levels both for the pledge and our consumers.
We will also look to reduce salt intakes by using less salt in food preparation. The amount of salt purchased by Elior has reduced considerably over the last 5 years.
Staff training, including chef training, will be an important part of meeting this pledge.
