Catering and Retail Services (CRS) have implemented and continue to develop measures for encouraging healthier eating for staff and Peers in the two staff cafeterias (River Restaurant and Millbank).

CRS will ensure the availability of healthier options, including:
• A salad bar with a wide range of freshly made salads
• A ‘Health for Life’ dish served in the River Restaurant
• A hot fish dish available in the River Restaurant
• A vegetarian hot dish available in both cafeterias
• A wide range of low calorie snacks
• Grilled or steamed fish on Fridays as an alternative to battered fish and chips.
• Soup made from fresh ingredients and free from additives and preservatives
• Sandwiches with low fat spread, wraps and salads made fresh by our kitchen
• Cold drinks containing sugar are available in no more than 330 mls containers
• Freshly squeezed orange juice is available in both cafeterias

CRS will continue to develop recipes to provide meals which are lower in fat, salt, and energy and which do not contain artificial trans fats. Examples of this include olive oil and crème fraiche in cooking instead of butter, cream and other fats. CRS provide responsibly sized portions of foods by ensuring that all hot meals, vegetables and hot desserts are served to customers by a servery assistant. The self-service salad bars are controlled by using medium sized plates and takeaway containers. Ham, cheese, tuna and cottage cheese to add to the salads are available in single portion size pots (approximately 60-80 grams). CRS ensure that a wide range of fresh fruit is available throughout the day. A piece of fresh fruit is priced lower than a hot or cold dessert.

A daily changing selection of freshly cooked vegetables are available for both lunch and dinner services.

CRS is developing and will adopt the traffic light system on displayed menus as an indication of fat content in hot dishes.

Jugs of water are provided on cafeteria tables throughout the day.
