Compass Group UK Ireland provides catering and support services to thousands of sites across the UK and we are committed to providing nutritional information to all sites that fall within the scope of this pledge.We cater for a diverse client and consumer base - including workplace restaurants, iconic leisure venues, sports stadiums, visitor restaurants in hospitals, students in colleges and universities and the military and we serve over one million meals every day. There will however, be a number of sites that are out of scope for the provision of calorie labelling.These are as follows:schools where the food we provide is nutritionally analysed to meet the school food trust nutrient and food based standardscare homes where we provide catering that meets the caroline walker trust guidelineshospitals where our patient meals are nutritionally analysed in accordance with hospital dietician directionssites where we only provide hospitality for a short time period or specific eventsites where we do not provide catering as part of our contract In the majority of sites within scope we will be providing full guideline daily amounts (GDA) labelling for all standard recipes and offers.This will show customers the number of calories, grams of fat, saturated fat, sugars and salt in an average portion and the percentage that contributes towards the GDA. In 50 sport and leisure sites, we will be providing calorie labelling to suit the way in which such information can be clearly displayed across such sites.Across many of our sites, we do not have standard offers; menus are created by our on-site chefs. To enable us to provide nutritional labelling for thousands of recipes we have therefore created a central recipe database and invested in an online recipe and menu planning system. We have developed menu planning guidelines for our unit managers to ensure that they provide the consumer with appropriate balanced choices at each mealtime. This system is linked to our nutritional analysis software, saffron, which enables all of our recipes to be analysed centrally before being accessed by our on-site teams. Our chefs can submit new recipes which, once tried and tested by chefs in our innovation centre, can be used across compass. The system is live so recipes can be immediately updated with any product changes, helping to ensure the labelling is accurate. To date, we have already rolled out nutritional labelling across 206 sites. We have detailed roll-out plans for each of our business sectors and we will continue to roll this out to approximately 200 sites every month with the aim of reaching over 2,000 sites by August 2012.
